How to Cook Prime Rib

Cooking the perfect prime rib is an art that brings out incredible flavors when done correctly. Here's how you can prepare a tender and flavorful prime rib roast for your next special occasion.

Ingredients

  • 4-6 pounds prime rib roast (bone-in or boneless)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons kosher salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Prepare the prime rib: Take the prime rib out of the refrigerator and let it sit at room temperature for about 2 hours. This ensures even cooking.
  2. Season the meat: Preheat your oven to 450°F (232°C). Rub the roast with olive oil, garlic, salt, pepper, rosemary, and thyme to fully coat the surface of the meat.
  3. Roast at high temperature: Place the seasoned prime rib on a roasting pan with a rack. Roast it at 450°F for 20 minutes to sear the exterior.
  4. Lower the temperature: Reduce the oven temperature to 325°F (163°C) and continue cooking. For medium rare, cook for about 15 minutes per pound, or until a meat thermometer reads 130°F (54°C).
  5. Rest the meat: Remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for 20-30 minutes—this step helps retain juices and ensures tenderness.
  6. Slice and serve: Slice against the grain into thick portions and serve with your favorite sides, such as mashed potatoes or roasted vegetables.

Tips for Success

  • Use a reliable meat thermometer for accuracy.
  • Always let the meat rest after cooking to preserve juices.
