How to Cook Prime Rib

- 4-6 pounds prime rib roast (bone-in or boneless)
- 2 tablespoons olive oil
- 4 cloves garlic, minced

- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped

- Prepare the prime rib: Take the prime rib out of the refrigerator and let it sit at room temperature for about 2 hours. This ensures even cooking.
- Season the meat: Preheat your oven to 450°F (232°C). Rub the roast with olive oil, garlic, salt, pepper, rosemary, and thyme to fully coat the surface of the meat.
- Roast at high temperature: Place the seasoned prime rib on a roasting pan with a rack. Roast it at 450°F for 20 minutes to sear the exterior.
- Lower the temperature: Reduce the oven temperature to 325°F (163°C) and continue cooking. For medium rare, cook for about 15 minutes per pound, or until a meat thermometer reads 130°F (54°C).
- Rest the meat: Remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for 20-30 minutes—this step helps retain juices and ensures tenderness.
- Slice and serve: Slice against the grain into thick portions and serve with your favorite sides, such as mashed potatoes or roasted vegetables.
